KCC January Theme


The January Theme is "What Filipino dish (savoury or sweet) would you like to have on your birthday?"


Since the holidays, it was just so crazy busy that I didn't even have time to write anything at all and I missed last month's challenge because it was just literally not enough time for me with my events. 
I made a promised to myself that I have to have something for January. So here comes today which is the deadline and at 3pm this afternoon, I still have nothing! I feel horrible but i just woke up after 38 hours (straight) of work in the kitchen and at the event site. I was trying to justify it with my little voice that it should be okay but it's not. So, here I am, scrambling to whip up something fast!
There are a lot of Filipino foods that I like on my birthday but I have to decide what are my favorites. It is usually a tradition that there should be a Pancit for "long life" but my favorite pancit in the pancit family is the Malabon or Palabok. I had all the ingredients but I don't have the noodles that I like and it's already 6pm! Oh boy- I'm in trouble!
So what else do I like to have on my birthday? My birthday is in July and normally I do have barbecue party so I decided to have Chicken Barbecue!


So here you go: 

You will need:
- One chicken breast, cut into cubes
- Lemon
- Soya sauce
- Brown sugar
- Vinegar
- Crushed garlic
- Salt and Pepper
- Skewers



Mix everything and marinate for at least 30 minutes in the fridge. 


Skewer the chicken and ready for grilling!



Grill it for about 4 minutes or until done.


And viola... here it is...wrapped in lettuce leaf with onions and tomatoes... nice appetizers. 



But it's dinner time and I need a more solid meal so, here you go. Steamed rice (white, parboiled and wild rice), tomatoes with onions and green onions and salted duck eggs!

Bacon Wrapped Chicken Breast

I was browsing the net the other day for chicken images and I came across with a succulent looking chicken breast, stuffed and wrapped in bacon. From the moment I saw that image, I just can't stop to salivate and crave about it. So, I have to re-create th dish. So here we go...

Ingredients:
2 pcs of chicken breast, butterflied
6-8 pcs Sundried tomatoes
2 tbsps Capers
1/2 cup Asiago cheese
8-10 pcs Bacon (i used beef bacon)

Procedure:
1) Season with salt and paper the chicken breast.

2) Drizzle a little bit of olive to chicken

3) Arrange the sundried tomatoes at the base of the breast in a linear fashion.

4) Put the capers on top.

5) Add the grated cheese. I just added a big chunks in between.

5) Roll from the base to the top.

6) Arrange the bacon slices next to each other.

7) Start rolling.

8) Fry the chicken until bacon is brown then bake into 400F until meat temperature reach 180C. Add a little white wine for moisture.

Kafta, Eggplants and Figs

It's almost 10pm and I'm here sipping my Nicaraguan coffee with a shot of Amaretto writing what we had for dinner. One thing I can tell you... it was amazing! It was something entirely out of being resourceful and innovative that i created something out of ordinary and just plain leftovers.
You see, I made this Spicy Eggplant with Dried Pepper Corns and Coriander the other night. It was very tasty and I absolutely loved it however it was too spicy! I just can't afford tossing it in the garbage and I just have to give justice to it.
So tonight, out of the whim, I chopped the leftover into small pieces then added some leftover eggwhites with some salsa... And viola! i had this amazing creamy scrambled eggplant... just yum.
While I was cooking the eggplant, Mr. Flips was also defrosting some ground beef and he said he wanted something Mediterranean... so I decided Kafta it is!!!I seasoned the beef with Mediterranean spices, coriander and mint... and there goes my kafta version of the night!
And finally, there were still fresh figs in the fridge so i told Mr. Flips to caramelize some onions and fig with a bit of balsamic glaze topped with some goat cheese.
Now i think you are getting the picture here... It's kind of crazy but incorporating everything in my mouth, it was just totally a different flavor and just melts in my mouth.

In summary, the menu consisted of:
Pan seared kafta in bed of creamy scrambled eggplant with figs and caramelized onions topped with herbed goat cheese and a splash of balsamic glaze. 


That was awesome!!! Now, I have to get back to my coffee and concentrate on this Top Chef show. So long...and expect this course to be on the Tita Flips future menu.
